Similar in flavor to scallions and garlic, wild ramps add a delicious, pungent flavor to rice dishes, soups, pastas, and more. Like most plants from the allium family, they're rich in vitamins A + C and are great for the immune system. They're often hard to find, as they're picky about where they grow & must be foraged in the wild. They begin popping up in the spring, so pickling them is a special way to have them around a bit longer!
